Fried Perch

Ingredients:

1 lb. perch fillets
1 cup flour
1 egg
1 cup panko bread crumbs
Salt & pepper to taste
1 cup vegetable oil

Place beaten egg, flour, and breadcrumbs in separate shallow bowls.

Salt & pepper perch fillets, dip fillets into egg, coat with flour and then
coat each side into crumbs; let stand for five minutes.

In a heavy deep skillet or electric frying pan, heat oil (about 3/4 to 1 inch
of oil) to 375 degrees. Fry fillets, a few at a time, for 3-5 minutes each side
or until fish is golden brown.

Place cooked fish on paper towels to absorb excess oil.

Hope you enjoy this recipe. Does anyone have a good fish recipe? I'm
always looking for a different way to serve fish.

My captain and I love Salmon and it cooks up really easily. I get the single-packed fillets and rinse them before I put them on a siliconed cooking platter (need to have holes to sizzle with the spice!), then I squeez lemon juice from 1 lemon, 1 tablespoon of soy sauce and a few shakes of original Mrs. Dash. Cook for 5-7 minutes on one side, flip re-season and cook the same amount of time on that side as well. I serve it with the package of Uncle Ben's 90 second rice packets (usually enough for us to share a package). It is a good dieter's meal and very tasty! Sometimes I add a veggie in a foil packet if we are in the mood. Thank heaven for the grill on the boat! I can almost smell the grilled fish and hey, where is my Captain! I love boating!!!!!!!!!!!!!!!!!!!!!
